WThis is a home-style version of a drink from our latest menu. It's a large-volume prepared mix that's loaded with the essence of the Christmas time, rendering it perfect for a celebration. Reserve the remaining syrup for morning drinks, sweets, or for another batch of the drink.

Yields 10 servings
Ingredients for the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Cocktail (makes 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
Making the Citrus Syrup: Combine all the components in a pan, heat until it reaches a light boil, agitating until the sugar dissolves. After that, turn off the burner and let it to reach room temperature fully. Decant to a sterilised bottle, cap it keeping it chilled, it can be stored for up to a month.
To make Batch Mix: Mix every liquids into a large bottle, leave to sit for an hour, then strain best through a fine cloth, to ensure it's perfectly clear.
When ready to serve: Add 85ml of your cocktail base into your stirring glass containing ice, and stir lightly for a minute to cool it down. Pour into an frosted cocktail glass or similar, top with a few cranberries and finish by giving it a brief mist of mandarin oil over the drink.
